It’s a problem many wine drinkers can relate to: Leftover wine. It would be a shame to get rid of an unfinished bottle of wine that is sitting in the fridge for many days or even weeks. Yet drinking the wine is not really favorable either. An easy solution to the problem is to use the leftover wine for cooking.

A simple recipe that uses wine as ingredient is ‘drunken cheese bread’. You need a baguette, half an onion, some ham, a cup of white wine, half a teaspoon pepper, and cheese of your choice. Put the bread into a buttered skillet and scatter the onion and ham over it. Put the skillet into the oven for 20 minutes at 200 degrees Celsius.
酒味奶酪面包——

Red wine risotto is another delicious recipe that brings your leftover wine to a good use. For the risotto you need five cups of chicken stock, two tablespoons olive oil, one small onion, one cup rice, half a cup dry red wine, one pound mixed wild mushrooms and one shallot. Prepare the chicken stock in a saucepan and keep it warm. In a large saucepan you heat the oil, add the chopped onion and after a few minutes the rice. Pour the red wine over the rice and stir everything up. When that’s done you add the chicken stock and salt and pepper.

A nice dinner is not complete without a dessert. Wine soufflé makes a delicious treat and is not difficult to prepare. For the soufflé you need three tablespoons of butter, one third of a cup flour, half a cup white wine, one pinch salt, half a lemon, six egg whites and half a cup granulated sugar. Melt the butter and stir in the flour. Now it’s time to pour in the red wine and to add some salt. After some minutes of stirring, remove the heat and let it cool. Separate the eggs and beat the egg whites. Add the mixture to the egg white and fill it into buttered molds. Sprinkle some sugar over it. To get the best result, fill some water into a pan and bring it to boil. Now you can place the molds with soufflé into the water bath and put everything into the oven. After 20 minutes at 210 degrees Celsius the soufflé is done.
酒味蛋奶酥
